Reports to: Food and Beverage Manager / General ManagerDepartment: Food & BeverageDuties and ResponsibilitiesOperations & Guest ServiceAssist in the daily management and operations of all F&B outlets (restaurant, bar, room service, functions).Ensure exceptional guest service and a memorable dining experience in line with 4-star lodge standards.Supervise service and kitchen staff during shifts and address any guest complaints or service issues promptly.Monitor food presentation and portion control for consistency and quality.Conduct regular inspections of dining areas, bars, and service stations to ensure cleanliness and readiness.Staff ManagementAssist in recruitment, training, supervision, and scheduling of F&B team members.Motivate and support staff, promoting teamwork and excellent customer service.Conduct performance reviews and provide constructive feedback in coordination with the F&B Manager.Monitor staff appearance and adherence to grooming standards and uniform codes.Stock and Inventory ControlAssist in managing beverage and food inventory levels, ensuring sufficient stock without wastage.Participate in monthly stock takes and cost control measures.Ensure correct portioning, waste control, and accurate recording of breakages or losses.Administration & ReportingPrepare shift reports and assist with daily and weekly F&B operations reports.Help oversee purchasing and supplier relations as required.Ensure compliance with health, safety, and hygiene standards.Assist with menu planning, pricing, and implementation in collaboration with the Executive Chef.Event CoordinationAssist with setup, coordination, and execution of lodge events, private functions, and bush dinners.Work closely with the lodge team to ensure seamless experiences for guests during weddings, group bookings, or special occasions. Qualifications and Experience
  • Matric / Grade 12 is essential.
  • A diploma or degree in Hospitality Management / Food & Beverage Management is advantageous.
  • 3–5 years’ experience in a similar F&B supervisory or assistant management role, preferably in a lodge or boutique hotel environment.
  • Strong knowledge of food and beverage service standards , wines, and bar operations.
  • Excellent leadership, interpersonal, and communication skills .
  • Proficiency in point-of-sale (POS) systems , stock control software, and Microsoft Office.
  • Well-presented and guest-oriented , with the ability to handle pressure and multitask.
  • Knowledge of health and safety regulations in the hospitality industry.
  • Drivers license preferred due to remote lodge locations.
