Key Duties & Responsibilities:Operational SupervisionOversee daily F&B operations, including dining areas, bars, room service, and special bush meals.Ensure that all meals are served to 5-star standards, with attention to guest satisfaction and experience.Maintain service excellence across all F&B service touchpoints.Supervise mise-en-place, set-ups, service execution, and breakdown.Staff Supervision & TrainingManage, schedule, and motivate service staff (waiters, bar staff, runners).Train new and existing staff in lodge service standards and guest interaction etiquette.Conduct daily briefings with staff regarding service expectations and guest preferences.Guest ExperienceEngage with guests during service to ensure satisfaction and handle special requests or complaints professionally.Maintain a detailed record of guest preferences, dietary requirements, and special occasions.Coordinate with the kitchen, guides, and other departments to ensure seamless service during game drives, private dinners, or bush meals.Stock & Inventory ControlAssist with monthly stocktakes of beverages, linen, cutlery, crockery, and service equipment.Ensure proper storage, handling, and rotation of stock to minimize waste.Place orders as needed and check deliveries for accuracy and quality.Administration & ReportingMaintain service checklists, shift logs, and incident reports.Ensure compliance with health, hygiene, and safety standards.Support budgeting and cost control measures in the F&B department. Required Qualifications & Skills:Qualifications:
- Matric / Grade 12 (essential).
- Formal hospitality or F&B qualification (advantageous).
- First Aid and Fire Training Certificates (preferred).
- Minimum 2–3 years in an F&B supervisory role in a 4- or 5-star game lodge or luxury hotel.
- Proven experience with fine dining service and high-end guest interactions.
- Experience with bush dining or outdoor catering setups is an advantage.
- Strong leadership and team management abilities.
- Excellent interpersonal and communication skills.
- Professional, well-groomed, and guest-focused.
- Attention to detail and a passion for delivering exceptional guest experiences.
- Good knowledge of wines, cocktails, and food pairings.
- Computer literacy (MS Office, POS systems such as GAAP or Pilot).
